Which program (in adobe) do I use to change a .pdf to a file which can be cropped and edited?

@penn
You would need the full edition of Adobe Acrobat. You will not be able to do so with just the reader. Here’s more information:

If you want to be able to crop and want more advanced features for the PDF file, you may want to consider Acrobat X Pro: http://www.adobe.com/products/acrobatpro.html
You will also be able to compress the file using this program.
